TARTE FLAMBĖE (FLAMMEKUECHE, FLAMMKUCHE, FLAMMKUCHEN)

Tarte Flambée, which means “flame cake”, is a French-German dish made of bread dough covered with fromage blanc or crème fraîche, thinly sliced onions and lardons.
It’s very similar to pizza and it’s usually baked into a wood-fire oven. Don’t worry, the electric oven is also very good :)
The bellow ingredients are for 2 trays (25/35cm)

Ingredients for Tarte Flambée (flame cake)

For dough:
- 450gr flour
- 7gr dried yeast
- 250ml lukewarm water
- 3 tablespoons vegetable oil
- 1 teaspoon sugar
- 1 teaspoon salt
For topping:
- 300gr sour cream
- 200gr smoked ham
- 1-2 red onions
- 200gr cheese
- salt and pepper to taste
- optional: ground nutmeg

How to make Tarte Flambée (flame cake)


Mix together the flour and dried yeast. Set aside.
In a large bowl whisk together 250ml lukewarm water, 1 teaspoon salt, 1 teaspoon sugar and 3 tablespoons vegetable oil.
Add the flour mixed with dried yeast. Add the flour gradually, stirring with a wooden spoon. When the dough becomes too thick to stir, start kneading. Knead until the whole flour is incorporated. You must obtain a smooth and elastic dough which doesn’t stick to the bowl or to your hand. If the dough is too sticky, you can add little more flour. Place the prepared dough into a lightly oiled bowl. Cover the dough with plastic wrap and let it rise for 45 minutes – 1 hour (or until double in size).
Meanwhile prepare the other ingredients: grate the cheese, slice the onions into rings, season the sour cream with salt and pepper and slice the ham into thin sticks (like a match).
Place the risen dough onto the floured working surface. Divide it into 2 equal pieces. Place 1 piece of dough onto the floured working surface. Use a roller pin to roll the dough into a rectangle which fits the baking tray (25/35cm).
Place the dough into a non-stick baking tray (or any other tray lined with parchment paper).
Prick the dough with a fork. Spread half of the sour cream over the dough.
Sprinkle half of the cheese, ham and onions.
Place the Tarte Flambée (flame cake) into the preheated oven and bake at 190ºC for about 15 minutes.
Repeat with the remaining piece of dough.
Serve warm as a main dish or as a snack.
