BANANA PANCAKES

Fluffy, moist, but a little crispy on the outside, banana and vanilla flavored – these are the absolutely delicious banana pancakes.
Banana pancakes are the perfect choice for a weekend morning breakfast. They are easy to make, children love them and you can top them with banana slices or other fresh fruits.
I love banana pancakes soaked with caramel or chocolate sauce :)



Ingredients for banana pancakes:


- 2 ripe bananas
- 2 eggs
- 300ml milk
- 250gr all purpose flour
- 1 teaspoon baking powder
- 2 tablespoons sugar
- a pinch of salt
- vanilla extract
For cooking: vegetable oil
For serving:
- sliced bananas
- syrup, caramel sauce, chocolate sauce or confectioners’ sugar

Instructions:


First whisk together flour, baking powder and a pinch of salt.
In a large bowl, mash the bananas.
Whisk in the 2 eggs. Add the milk, sugar and vanilla extract and whisk until combined.
Poor the flour into the banana-milk mixture and mix until incorporated.
Set a lightly oiled non-stick frying pan over medium heat until hot. Using a ladle pour the batter into the frying pan.
Cook until bubbles form on the top of the pancake and the underside looks golden brown. Flip the pancakes and cook until the other side is golden brown.
Repeat with the remaining batter, lightly oiling the frying pan after each round of pancakes.
Serve banana pancakes topped with fresh fruits, syrup, caramel sauce, chocolate sauce or confectioners’ sugar.
